Sunday - Laura

I saw an interesting new idea for "pizza" on the Healthy Girl cooking show today. She used egg plant slices, and pepper slices (roasted first) as the "crust" for healthy pizza. As the peppers got softer, you unroll for a flatter and longer bottom. You add healthy toppings and grill or bake. Yum. Definitely something I will try.
